Holiday Baking: Gingerbread Pinwheels

Four days into the month and I’m already feeling the effects of holiday eating. ‘Course, I’m not helping matters much baking cookies and bringing them to the office in prep for the cookie exchange party on 12/9. These gingerbread pinwheels were time consuming — obviously I’ve got to work on my rolling technique — but with as much butter as is in these little babies, my arteries just won’t support making another batch until…well, maybe next year.
