I’m forever the person who finds a lot of Trader Joe’s desserts on the too sweet side, so I expected these Trader Joe’s Shortbread Sandwich cookies with Raspberry Filling would be too much for me. Much the way those Strawberry Shortcake cookies were a sugar bomb. But I gotta tell ya, for me, these are darn near perfect for a store-bought cookie.
The shortbread is thin, crisp but not too sandy or crumbly, and the layer of raspberry filling is just right. Not too thick, not too sweet. (I’m turning into Goldilocks over here). And two of them were perfect with a glass of milk. They’d be a nice little biscuit to go with a cup of tea, too. There are 10 to a $2.99 package, so you’re not signing up a gazillion cookies you won’t finish. The ingredient list is pretty clean as store-bought cookies go.
I don’t know if I’m entering my granny era or what, but I liked Trader Joe’s Shortbread Sandwich cookies a lot. I like the decision to go raspberry over strawberry (since spring strawberry stuff seems to be on its way in). I would definitely buy these again. I should mention I couldn’t get the plastic tray back into the foil without risking breakage on the cookies, so I just threw them in a ziptop bag. If you don’t slide it all the way out, you’ll be fine.
