Eight Must Bakes from SWEET by Yotam Ottolenghi and Helen Goh

This month, @RainyDayBites’ Instagram-based cookbook baked from Sweet by Yotam Ottolenghi and Helen Goh. There have been some pretty impressive bakes and a whole lotta butter spread across several feeds. The two challenges for the month were Blackberry and Star Anise Friands (p. 103) and Take Home Chocolate Cake (p. 152).

I don’t consider myself an accomplished baker by any stretch, but I can follow directions like nobody’s business. What I learned over the several bakes I tackled was that it’s worth it to get new, nonstick pans and have plenty of parchment paper and butter on hand.

In June, the club will be cooking from Diana Henry’s How to Eat a Peach.

I baked way too much stuff this weekend (even by my already-prone-to-overkill standards) but out of everything that crossed paths with my oven I think the Magical Unicorn Cuteness Award for Both Looks And Name goes to these charming pink and cream Rhubarb Custard Yo-Yos from @ottolenghi and @helen_goh_bakes’s Sweet. Peach & thyme galettes with polenta pastry from Sweet by @ottolenghi & @helen_goh_bakes . There’s a slight crunch in the polenta pastry that’s topped with thyme infused crème pâtissière and honey glazed peaches (or apricots if you have them). 🎼It’s just another Madeleine Monday, wish it was Sunday ‘cause that’s my fun day🎼 It was my Sunday fun day that these Saffron, orange and honey Madeleines got baked. This is another great recipe from Sweet by @ottolenghi and @helen_goh_bakes. Just tasting this batter with the saffron infused melted butter with honey was enough to know these were not going to be your standard madeleines. They baked up perfectly, got coated in honey, dipped in chopped pistachios then made to stand and pose for me like little cookie soldiers. Next up I’m feeling something fruity or rhubarby. That’s a word right? Lemon, blueberry, and almond tea cakes from Sweet: Desserts from London’s Ottolenghi by @ottolenghi and @helen_goh_bakes. Tender lemony mini almond cakes are studded with juicy blueberries and crowned with a blanket of snowy white icing and blueberry jewels. A basket of blueberries sat on my counter beckoning me to bake something today from Sweet, and I was torn between this dessert, and another cake, but the mini size and beauty of these won me over. These are so fantastic. Tender, bright, sweet, and a hint of tartness these are so easy to make and yet feel indulgent and special. I used @bobsredmill almond flour instead of almond meal and they turned out so tender! Wouldn’t these be great for an after dinner dessert with company?! Chocolate. Banana. Pecan. cookies from Sweet by @ottolenghi and @helen_goh_bakes. I mean, you were probably thinking regular ol’ chocolate crinkles, right? 🍫🍫 These decadent crinkles call for dark chocolate, @valrhonausa for me, and Dutch processed cocoa along with half a banana, before taking a roll in finely chopped pecans and a final pre-bake dip in powdered sugar. It’s just enough banana so that you’re saying, huh, is that banana? 🍫🍫 All I know is that these will probably replace the classic chocolate crinkles on my Xmas cookie plate. Cake for brekkie is always acceptable on the weekend right?!?🍰 . Take-home chocolate cake with chocolate ganache & espresso cinnamon mascarpone cream by @helen_goh_bakes & @ottolenghi from their book Sweet which is #rainydaybitescookbookclub pick for this month – It’s basically the fudgiest cake I have ever had – we shared it with friends & all agreed. It called for dark chocolate but I used semi sweet throughout bc thats what I had on hand and it worked!! It’s so easy to make – all made in one bowl and the ganache is fabulous as you can see!! The cream was delicious on its own but the majority of us loved the cake as is without it.
