Banana Breakfast Cookies

I was a hold out for a long long time on Larabars. The texture always kind of weirded me out – they’re just a little too soft, y’know? But after trying the Ginger Snap and more recently the Coconut Cream Pie, I’m on board. They’re like Samoas without the chocolate! And they were a perfect snack on the drive home from Medford on Monday. Anything to minimize the fallout from a road trip stop at McDonald’s, y’know? It got me thinking about breakfast cookies.


Are we all just fooling ourselves with this breakfast cookie thing? You feel good about it because you’re getting whole grains, fruit and some protein from nuts, but on the flipside you’re getting a decent amount of fat along with it. It’s all about trade-offs. Anyway, I finally got around to making these No Sugar Oat Drops from Blueberry Girl, but I caved and added 1/4 c. chocolate chips…and 2 T. of maple syrup to sweeten them up. (Ok, so maybe it’s my fault!)

What I like about these is that the oats and coconut are the main attraction. This isn’t a standard cookie masquerading as a healthy breakfast — no flour, no eggs, no sugar, no leavening. With 3 super ripe bananas in the mix, these aren’t crunchy cookies, but they’re good on the go and they got the thumbs up from OJ. Next time, I’ll cut the banana by half and sub in some peanut butter.
