When it comes to Trader Joe’s Spinach and Cashew Ravioli, call me surprised and call me a fan! As someone who does eat eggs and cheese, I did miss a little of the egginess of standard pasta dough. But the pasta is actually thin and delicate and pretty dang good for a packaged pasta!
There were 21 ravioli in the package, so roughly 7 per serving, which is a pretty reasonable portion. I made a basic marinara, boiled the pasta, and had them for lunch. Because the pasta is so delicate, definitely boil them gently. I still had one blow out in the pan.
When I first saw these, I thought they might have a cashew ricotta filling. But as you can see in the cross section, it’s literally a spinach-cashew filling. I boiled them in lightly salted water, but I found them a little plain without sauce. They definitely need something with a little acid to pep them up. With the marinara they were great.
It’s been awhile since I’ve had Kite Hill’s refrigerated pasta, so I can’t really compare them. But based on what I’ remember, I’d say TJ’s takes it.
Will I buy them again? Yes. In the summer I’d try them with cherry tomatoes, fresh basil, and a drizzle of olive oil.
