This month the #RainyDayBitesCookbookClub on Instagram has been cooking from David Tanis Market Cooking. It’s a perfect choice for celebrating summer and the plethora of produce coming out of farmers markets across the country. This past weekend, the group challenge was the Fresh Corn Griddle Cakes with Spicy Salsa.
You know we love corn cakes around here, and Bill Granger’s version has long been the favorite. Where Bill’s are about having just enough batter to hold together the corn, peppers and onion, David Tanis’ griddle cakes are closer to a cross between cornbread and pancakes. They’re delicious in their own right, and arguably, they reheat better, too. I popped a couple into the toaster on the second day and there were still great.
The salsa recipe takes this further into savory territory, but I think they’d be great with a peach or nectarine version, too, especially now, at the height of the season.
Some of this month’s participants served them as a side with chicken or grilled sausage. Others went full on with the toppings, adding salsa verde and cilantro into the mix. Check out the results at #rainydaybitescookbookclub on Instagram.

A couple of other highlights from the month were the the Stewed Zucchini Pasta with Ricotta and Basil, the Tomato Chutney, and the Fast Fresh Tomato Sauce, which is great both on pasta and as a pizza sauce. I’m looking forward to spending more time with the book as we move into fall and winter. It’s easy to be good in summer, it’s the rest of the year’s produce that can be a little more challenging.
