Vegetarian Summer Rolls w/ Quinoa

You know that thing I said about tiptoeing into fall? It’s on hold. Well, temporarily. Ma Nature has gifted us with an extended summer and around these parts, you don’t look a sunny and 75 gift horse in the mouth. You bypass the pumpkin lattes and keep on making cold brew and enjoy every last bit of summer you can, because there’ll be beets and parsnips from the moment it ends until July comes around again next year.

I’m sure I’ve committed some kind of culinary crime with these vegetarian summer rolls. Violated a sacrosanct law by bringing quinoa into the picture. A grain that’s as hipster as skinny jeans and typewriters. But if you’re trying to get more whole grains, more fiber, well, then you work it in where you can.  These summer rolls are a perfect little snack, a perfect little starter and they’re chock full of vegetables.

Ice Cream Dream: Shoyu Caramel Sauce

In FoodBlogLand, everything is well lit and screen-lickingly delicious. All dishes are successes and a minor misstep can be saved with a well-placed garnish or a sauce. But in the real world, sometimes things just don’t turn out the way you expect. I could let this custard melt back to its former state (which would take less than 5 minutes) and call it a shoyu caramel milkshake, but I’m not gonna do it. It was meant to be ice cream and it just didn’t freeze into anything that would hold a remotely scoop-like shape. It just didn’t.

The caramel flavor is strong, the consistency is creamy with the elasticity you associate with caramel,but you just can’t lick it off a cone. But even in this beautiful disaster there’s a win – the caramel sauce.

Summer Chopped Salad w/ Soba Noodles

In the summer, it’s supposed to be easy to be extra virtuous. Cherries, berries, peaches. Tomatoes, peppers, cucumbers…the markets are overflowing with lovely produce to tempt your tastebuds. But I was anything but virtuous this weekend. It was glorious in Seattle. Summer truly arrived, the sundresses and sandals came out of hiding and we had a little barbecue. Nothing fancy, just sausages, potato salad, grilled peppers and zucchini. But something about sitting out in the warm summer sun put Doritos, Fritos and cupcakes on the menu, too. It was a “I’ll start that diet on Monday,” kind of weekend.

Slow Cooker: Coca-Cola Braised Pork

It’s almost February. We’re in the thick of winter, when a slow cooker should be getting a real workout. But strangely, I haven’t been using mine that much. I like doing soups and chilis on the stove, but the truth is, the slow cooker is almost a magical appliance. You throw in a few things, cover it with the lid, abracadabra and 6-8 hours later, you have something amazingly delicious. It took this Coca-Cola Braised Pork shoulder to remind me just how magical it can be. I’m not even going to feign modesty and say, “Oh, it’s pretty good, you might like it.” I’ll just say it, this pork shoulder is super tasty. It’s not just good, it’s gooooooooood.
