The last few summers we've made an annual trip up to Tofino, situated on the edge of Vancouver Island, about a 4 hour drive from Victoria, BC. It's a great surf spot for Wolf, it's got great hiking and beaches and a concentration of restaurants in Tofino-town. The timing of this year's trip didn't let us (well, at least me) sign off completely, so it ended up being a working vacation.  Still great to get away.  As it turns out, even after several visits there are plenty of new discoveries still to be made in Tofino.

Chocolate-Topped Peanut Butter Bars – Healthy, No Bake & Gluten-Free

  After we’re back from a vacation, I always find myself trying to hold on to a piece of it, checking the weather, reading the local news from wherever we’ve just been.  After our trip to Tofino in August, I’ve found myself checking the Long Beach Lodge Resort’s Web cam with a view of the beach and Cox Bay and trying to recreate the chocolate-topped protein bars they serve as part of their complimentary continental breakfast.  But calling them protein bars really sells them short.  Would you believe me if I told you they taste good and they're actually pretty healthy?

What I Did on Summer Vacation, Part 1: Tofino, BC Edition

Summer vacation is a bit of misnomer if you live in the Pacific Northwest. Summer is when it’s finally sunny and beautiful here, so you want to stay home and soak it up, rather than leave it behind. The last couple of years we've kept our vacations close to home, exploring other parts of the Pacific Northwest, but we’ve taken them either too early or too late to get a strong dose of sunshine, but this year, we hit it just right. We’re just back from a glorious week in Tofino, British Columbia, a little beach town on the edge of Vancouver Island near Pacific Rim National Park.

Spotted Bear Bistro – Tofino, BC

Spotted Bear is the kind of neighborhood joint I wish we had around the corner. The kitchen is right there as you walk in, and you're as likely to be greeted by the chef as by the host. With Tofino being a beach town, you might expect seafood to dominate the menu, but Spotted Bear strikes a balance, offering up dishes that take advantage of the local seafood, with plenty of options for folks who aren't so big on salmon and mussels (like me!).

New Ideas for Salad: Orange-Vanilla Vinaigrette & Braised Greens

Aside from the sunshine, doing nothing and umbrella drinks, eating local is one of the best things about vacation. I love those trips where the biggest decision I'll have to make on any given day is what to eat next. On our recent trip to Tofino, BC, many of the restaurants in town featured greens from Nanoose Edibles Farm in Nanoose Bay, BC. One of the best was this salad at the Long Beach Lodge Resort with Nanoose Edibles greens, Okanagan Happy Days goat cheese, toasted hazelnuts and strawberries with a citrus and vanilla vinaigrette.

Food Truck Alert: TacoFino – Tofino, BC

What is it about surf towns and great Mexican food? I don't know if I'm totally biased by having spent most of my life in California, but Tofino, BC on Vancouver Island, is proving out the connection. Off Pacific Rim Highway in Tofino, there's a little center with a small grocery, a surf shop, a coffee place, and a taco truck at the back of the parking lot, a taco truck which is doing crazy business with locals and tourists alike.
