Cubano-Inspired Pulled Pork Sliders

cubano-inspired pulled pork There’s nothing quite like a good Cubano sandwich. Layer on layer of pork – roasted loin, ham and salami with Swiss cheese, pickles and a schmear of mustard, pressed like a panini until the cheese is melty. On the West Coast, unless you’re at a Cuban restaurant, it’s not a sandwich you see all that often. There are exceptions – the last one I had was actually a couple of years ago at Matt’s in the Market here in Seattle. We also have a Caribbean place called Paseo that’s supposed to have a great Cubano-like sandwich.  But really, there's no reason you can't make a pretty good Cubano, or  perhaps more accurately here, a medianoche sandwich at home. (The main difference is the bread). The mojo(ish)-marinated pork started as tacos for Saturday night’s dinner, but as I thought about the leftovers, Cubano-inspired pulled pork sliders seemed like the perfect lunch for us and a great idea for the Super Bowl next weekend.

Cool Off a Hot Summer Night: Edamame Hummus

We’re in the dog days of summer, finally. Days so hot all you want to do is sit in front of an oscillating fan and sip a cool glass of iced tea. Days so hot nothing is getting cooked, except you in your car on the commute home. I’ve got something for you. It’s cool, crisp and refreshing. It’s….a sandwich. Well, a dip and a sandwich. Break out the food processor, we’re making edamame hummus, which you can do as dip for dinner with veg and pita chips, or as a great spread on sandwiches for the “Damn, could it get any hotter?” nights ahead.

Gluten-Free Oatmeal Peanut Butter Chocolate Chip Cookies

Back of the bag recipes have sustained us for ages. Our grandmothers clipped recipes from paper board cylinders of oatmeal, from the backs of chocolate chip bags, and ordered recipe booklets from Betty Crocker and Jello. Some of those recipes stand the test of time because manufacturers just keep putting them on the packages, like the Toll House chocolate chip cookie recipe. But others are lost to the ages because there was no where else to get them. It's in that spirit that I'm bringing you these cookies from the back of the Trader Joe's Rolled Oats bag. The Berliner – Doner Kebab in Seattle

The last few days have been completely amazing in Seattle. Sunny as all get out. You don't know how exciting sunshine is until you haven't had it for awhile. On Saturday in all that beautiful sunshine, we headed downtown with a plan to stuff our faces, first at Sweet Iron, a newish liege waffle place we hadn't yet tried, and then to hit The Berliner, a doner kebab joint in Pioneer Square.

Molasses & Sriracha Pulled Pork

This past weekend may have been the unofficial end of summer, but we celebrated our 3-day weekend with a sandwich that knows no season -- a pulled pork sammy. I've been known to cook up pulled pork sliders for the Superbowl, for birthdays or for no good reason at all, other than that pork shoulder was on sale.
