Ever get the feeling we’re all making the same 100 recipes in slightly different ways? I make a black bean salad periodically that’s just a thrown together mix of black beans, corn, red onion, tomato, sometimes cucumber and avocado with lime, cumin and olive oil, and a little salt and pepper. A few states over, it’s got black-eyed peas, jalapeno and cilantro and they call it Cowboy Caviar. Call it what you want, this salad doubles as a rustic salsa, and it’s spot on for those of us getting our vegetable on, for those watching football and for general New Year’s good luck.
On Kauai, the farmers market in Hanalei is serious business. It opens at 9:30 on Saturday morning next to the soccer fields and a few minutes before 9:30 a.m., there are already 20-30 people waiting to be let in. There's no leisurely browsing here, once the rope goes up, shoppers beeline for their favorite vendors. On this late February morning, there are gorgeous strawberry papayas, mangoes, rambutans, avocados, salad greens, cilantro and parsley, ginger and more. And for someone who's been eating a lot of chard and citrus, it looks like heaven.My single cherry tomato plant is just starting to offer up ripe fruit, so we've only had a batch or two of fresh pico de gallo so far this summer, thanks to my Full Circle Farm CSA box. Sometimes the standout in a meal surprises you. I expected the main topic of this post to be the chicken tacos we made using this recipe from the Flying Pig food truck, but what I want to talk about first is pineapple salsa.
I don't know if it's because this Spring has been very un-sunny and I'm jonesin' for a Hawaiian vacation, but this pineapple salsa really struck a chord. You'd think I never had a fruit salsa before. It was the perfect complement to the tacos.
