It’s a job I know I could never do, let’s face it, unless I taught 1st or 2nd grade, all the kids would be taller than me. But more than that, you get breaks! We’re just back from some time in Hawaii for the annual escape to sunshine, hence the radio silence around here. The one thing we didn’t have for the duration of our trip was pizza. Hanalei Pizza Company is gone, about to be replaced by a Puka Dog. So, for the first time in ages, we went 10 days without even a slice of pizza. Since we had nothing else in the house, pizza was our first meal back. And whaddya know, my first post back is a Friday Night Slice. Today’s slice is a vegetarian Kale, Calabrian Chile & Mozzarella pie with thinly shaved garlic.

Maximum Pesto, Minimum Noodle

basil pesto orzo salad |dailywaffle Wolf declared this the best pesto he’s ever had. I laughed,  made a “yeah, whatever” face and said, “You’re just hungry.” It’s the same basil pesto I’ve been making for years and there’s nothing all that unusual about it.  I don’t put pine nuts in it and I add a squeeze of lemon juice to stave off discoloration. So, why talk about it? We made a discovery the other night. The secret here is maximum pesto, minimum noodle.

Easy Peasy > Gemelli w/ Sausage & Cherry Tomatoes

  This wasn't supposed to be a blog post, just dinner on Monday night.  There are no photos of cherry tomatoes casually rolling toward the edge of the counter, or a scatter of pasta strategically positioned behind the bowl. There's not even a fork, just a quick snapshot because I was texting it to Wolf to get him to hurry up on home.  Then, I was pleasantly surprised by how fast and delicious it actually was, so, well, here we are. Gemelli con salsiccia e pomodorini…which sounds fancy, no? Gemelli with sausage and cherry tomatoes. Let’s go.

Be My (Pizza Spinaci) Valentine

  Every Rom-Com, every book, every platitude says when you meet “The One,” you’ll just know.  We didn’t lock eyes in a crowded airport terminal or pass each other on a train platform or have an awkward conversation about the weather in biology lab.  We met on the Internet.  And it’s like….magic. I have fallen completely, utterly and irrevocably in love. We are M-F-E-O (made for each other). My husband? What?  No, I met him in a bar.  I’m talking about the Baking Steel.

Quick & Easy Spinach and White Bean Burgers

  Anything shaped in a patty has a homey feel to it, doesn’t it? A hamburger, Salisbury steak, mashed potato cakes, they’re either home food, or diner fare. And for the most part, they’re fast.  Mix this and that together, form a disk and fry it up in a hot pan. But the thing is, you don’t have to limit your notion of a patty to meat. You can sit down to a delicious dinner in 20-25 minutes if you’ve got a can of beans (and a reasonably stocked pantry). This recipe germinated in my mind as a chicken meatball, but my pantry dictated. “Beans," it said. “It will be Great Northern beans.” It'll do that on a Wednesday when you don't have time to go the market.
