{"id":9711,"date":"2012-09-09T21:52:11","date_gmt":"2012-09-10T04:52:11","guid":{"rendered":"https:\/\/dailywaffle.com\/stage1\/?p=9711"},"modified":"2020-06-06T12:23:07","modified_gmt":"2020-06-06T19:23:07","slug":"no-bake-wheat-free-peanut-butter-bars","status":"publish","type":"post","link":"https:\/\/dailywaffle.com\/stage1\/no-bake-wheat-free-peanut-butter-bars\/","title":{"rendered":"Chocolate-Topped Peanut Butter Bars &#8211; Healthy, No Bake &#038; Gluten-Free"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>After we\u2019re back from a vacation, I always find myself trying to hold on to a piece of it, checking the weather, reading the local news from wherever we\u2019ve just been.\u00a0 After our trip to Tofino in August, I\u2019ve found myself checking the <a href=\"http:\/\/www.longbeachlodgeresort.com\/site\/video\/cox-bay-tofino-webcam.html\" target=\"_blank\" rel=\"noopener noreferrer\">Long Beach Lodge Resort\u2019s Web cam<\/a> with a view of the beach and Cox Bay and trying to recreate the chocolate-topped protein bars they serve as part of their complimentary continental breakfast.\u00a0 But calling them protein bars really sells them short. \u00a0Would you believe me if I told you they taste good and they&#8217;re actually pretty healthy?<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/09\/09\/no-bake-wheat-free-peanut-butter-bars\/lblr-bars-foursome\/\" rel=\"attachment wp-att-9714\"><img fetchpriority=\"high\" decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-9714\" title=\"LBLR bars foursome\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-foursome.jpg\" alt=\"\" width=\"500\" height=\"331\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-foursome.jpg 500w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-foursome-300x198.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 500px\" \/><\/a><\/p>\n<p>You remember those Reese\u2019s-like peanut butter bars they used to serve as part of school lunch? Arguably, the only edible thing on the yellow divided tray?\u00a0 These are those bars, but better. Healthier. \u00a0We had them at breakfast, but these can easily be dessert.<\/p>\n<p>So the <a href=\"http:\/\/www.longbeachlodgeresort.com\" target=\"_blank\" rel=\"noopener noreferrer\">Long Beach Lodge Resort<\/a>&#8230;it has a fantastic location with a gorgeous beach <em>and <\/em>dog-friendly accommodations. Last summer we stayed in a cottage with 2 beds, 2 baths and a small kitchen.\u00a0 It\u2019s nice for a little more privacy and space, but this year, with just H. along for the trip, we opted for a beachfront room, which offered direct access to the beach, and to the gorgeous sunsets. All the <a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/08\/29\/what-i-did-on-summer-vacation-part-1-tofino-bc-edition\/\" target=\"_blank\" rel=\"noopener noreferrer\">sunsets in my earlier post<\/a> are from the beach at Long Beach Lodge Resort.<\/p>\n<p>Included in your room rate is a complementary continental breakfast in the Great Room, which along with Lavazza coffee and Tofino Tea Bar tea, features cinnamon rolls, fruit salad, various muffins, scones and toast, proper oatmeal, and these wheat-free peanut butter bars.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/09\/09\/no-bake-wheat-free-peanut-butter-bars\/lblr-breakfast-bars_2\/\" rel=\"attachment wp-att-9715\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-9715\" title=\"LBLR breakfast bars_2\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-breakfast-bars_2.jpg\" alt=\"\" width=\"505\" height=\"250\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-breakfast-bars_2.jpg 505w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-breakfast-bars_2-300x148.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 505px\" \/><\/a><\/p>\n<p>While there, I tried to deconstruct the bars through taste and guessed almond butter (wrong) and maybe oats (also wrong). I made a batch with similar ingredients after a quick Google, but it was nothing like the LBLR bars.\u00a0 Luckily, they were kind enough to share the recipe. This adaptation scales it down to a size manageable for a home cook, while reducing the amount of butter.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/09\/09\/no-bake-wheat-free-peanut-butter-bars\/lblr-bars-side\/\" rel=\"attachment wp-att-9716\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-9716\" title=\"LBLR bars side\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-side.jpg\" alt=\"\" width=\"500\" height=\"500\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-side.jpg 500w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-side-150x150.jpg 150w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-side-300x300.jpg 300w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/09\/LBLR-bars-side-94x94.jpg 94w\" sizes=\"(max-width: 600px) 100vw, 500px\" \/><\/a><\/p>\n<p>A couple of tips:<\/p>\n<p>1. An offset spatula would have been incredibly useful for getting a really smooth top, but I made do with a regular rubber spatula. In the pan, it may look like a little crazy, but get an even layer, and once you cut the bars, it&#8217;s fine.<\/p>\n<p>2. Use a sharp knife to cut the bars and wipe it off between cuts to ensure clean slices.<\/p>\n<p>3. Grind the sunflower seeds well to get a texture closer to the ones in the photo from our breakfast. \u00a0I kept them a little more chunky, and you can see the resulting texture in my photos.<\/p>\n<p>4. Stir until homogenous.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">3<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>In a large bowl, stir together almond meal, ground sunflower seeds, ground flax, coconut and apple. Stir peanut butter mixture in to the dry ingredients until combined. Press into the sheet pan and refrigerate for 30 minutes until set.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>Once the bars have set, Clean the double boiler and combine chocolate and cream to make a ganache. Pour the ganache over the bars and smooth to create an even layer.
