But I won\u2019t let it be. I&#8217;m saying right here, right now, it ain\u2019t over til it\u2019s over. We\u2019re in the <em>best<\/em> days of late summer \u2013 still warm and mostly sunny \u2013 and the chiles have arrived. <em>The <\/em>chiles \u2013 you know the ones. From New Mexico. As a California native, it pains me to say it, but Anaheims just aren&#8217;t the same. We&#8217;ve waited through the green peppers, then the jalapenos and poblanos, and now the green chiles are here. Finally, it&#8217;s Hatch chile time.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/08\/30\/hatch-chile-popovers\/hatch-chile-popovers-with-chili_2\/\" rel=\"attachment wp-att-9609\"><img fetchpriority=\"high\" decoding=\"async\" class=\"lazyload_inited aligncenter wp-image-9609 size-full\" title=\"hatch chile popovers with chili\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/hatch-chile-popovers-with-chili_2.jpg\" alt=\"hatch chile popovers\" width=\"500\" height=\"331\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/hatch-chile-popovers-with-chili_2.jpg 500w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/hatch-chile-popovers-with-chili_2-300x198.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 500px\" \/><\/a><\/p>\n<p>I wasn\u2019t born a chilehead, but I look forward to chile season all year. Sure, you can get red bell peppers (yes, I know, they&#8217;re not chiles) and jalapenos grown in greenhouses the rest of the year, but there\u2019s something about the changing light, the waning heat of the late summer that signals the best chiles are just ahead. Enough New Mexicans have moved to the Pacific Northwest that even up here, our grocery stores are bringing in those gorgeous chiles. And some of us have been waiting for the hot ones. I&#8217;m usually a weenie when it comes to heat, but by Northwest standards, I like &#8217;em hot-hot-hot.<\/p>\n<p>I haven&#8217;t yet made the pilgrimage to New Mexico &#8212; the festival is this weekend, btw &#8212; but one day I&#8217;ll get there. It&#8217;s a Labor Day weekend tradition and travelling during holiday weekends is challenging at best, and at the end of summer (ok, fine, I said it), fuhgeddaboudit.<\/p>\n<p>This year, I&#8217;m working up some new Hatch recipes to join the <a href=\"https:\/\/dailywaffle.com\/stage1\/2011\/10\/23\/hatch-chile-mac-and-cheese\/\" target=\"_blank\" rel=\"noopener noreferrer\">mac and cheese<\/a> and <a href=\"https:\/\/dailywaffle.com\/stage1\/2011\/08\/25\/hatch-chile-chicken-enchilada-casserole\/\" target=\"_blank\" rel=\"noopener noreferrer\">enchilada casserole<\/a>. Today\u2019s selection? A perfect accompaniment for a bowl of red. Put the eggs, milk, green onions, all but 2 T. of Hatch chiles, and cheese into a blender and whizz them up. Add in the dry ingredients and blend until combined.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">3<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>Pour batter into the muffin cups, filling each \u00be full. Garnish the tops of each muffin w\/ the remaining chiles. Bake for 20-25 minutes until browned. Let cool for 2-3 minutes and loosen from the pan.
