All dishes are successes and a minor misstep can be saved with a well-placed garnish or a sauce. But in the real world, sometimes things just don\u2019t turn out the way you expect. I could let this custard melt back to its former state (which would take less than 5 minutes) and call it a shoyu caramel milkshake, but I\u2019m not gonna do it. It was meant to be ice cream and it just didn\u2019t freeze into anything that would hold a remotely scoop-like shape. It just didn\u2019t.<\/p>\n<p>The caramel flavor is strong, the consistency is creamy with the elasticity you associate with caramel,but you just can\u2019t lick it off a cone. Inspired by the yaki-nigiri, rice balls grilled and basted with teriyaki sauce, from the <a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/07\/25\/scenes-from-seattles-bon-odori-festival\/\" target=\"_blank\">Bon Odori festival<\/a> a couple of weeks ago, I thought, why couldn\u2019t a simple shoyu (aka soy sauce) and sugar mixture be a caramel for ice cream?<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/08\/03\/shoyu-caramel-sauce\/shoyu-caramel-on-a-fork\/\" rel=\"attachment wp-att-9494\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-9494\" title=\"shoyu caramel on a fork\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/shoyu-caramel-on-a-fork.jpg\" alt=\"\" width=\"400\" height=\"400\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/shoyu-caramel-on-a-fork.jpg 400w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/shoyu-caramel-on-a-fork-150x150.jpg 150w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/shoyu-caramel-on-a-fork-300x300.jpg 300w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2012\/08\/shoyu-caramel-on-a-fork-94x94.jpg 94w\" sizes=\"(max-width: 600px) 100vw, 400px\" \/><\/a><\/p>\n<p>If you read the <a href=\"http:\/\/www.saveur.com\/article\/siteswelove\/Sites-We-Love-DailyWaffle\" target=\"_blank\">Saveur&#8217;s Sites We Love piece on the DailyWaffle<\/a> [Yes, shameless plug. I\u2019m still over the moon about it!], you know soy sauce is one of my favorite ingredients. It goes on scrambled eggs, it\u2019s a dip with mayo, so why not on dessert?<\/p>\n<p>The sauce is salty sweet and takes on caramel notes through the cooking. Made with just two ingredients, yes amazingly just two &#8212; soy sauce and sugar &#8212; it\u2019s the core of teriyaki sauce. Sure, you could go experimenting with different soy sauces, but we just use Kikkoman around here. Bottom line, this caramel sauce is fantastic on vanilla ice cream. You need that simple backdrop to really let it shine. Won\u2019t it be a nice little surprise along side the hot fudge and butterscotch and strawberry the next time you do an ice cream sundae bar? Heat over medium low, until the sugar dissolves and the mixture comes to a boil. Cook for 2-3 minutes, stirring constantly so it doesn\u2019t bubble over. Turn off the heat and let cool completely.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">2<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>The mixture will thicken up as it cools.
