Trader Joe&#8217;s is solving that problem by serving up ready-to-bake pumpkin ginger scones in its frozen section. I baked up a few this morning for breakfast. You bake them on parchment for 14-16 mins at 375F. The package also advises letting them thaw for 5 minutes while the oven preheats, but I think the light thaw may be one of the reasons they baked up a little wonky.  One in particular lost its shape, as you can see. They&#8217;re not partcularly gingery, and a little sweeter than I typically expect with scones, but I&#8217;m not complaining. I like these a lot. The box says 2 is a serving, but 3 was perfect for me. Would I buy Trader Joe&#8217;s Mini Pumpkin Ginger Scones again? Heck yeah. If you want to fancy them up a bit, you could brush them with milk or cream and sprinkle with a little turbinado or maple sugar.
