You can’t have a blog called DailyWaffle without making Trader Joe’s Ube Mochi and Pancake Mix into waffles. The great part about this mix is, a box makes 6 waffles (or 12 pancakes), and it gives you instructions for making just 2, if that’s all you want. <\/p>\n\n\n\n

I opted to go with Belgian waffles, and it’s just a matter of stirring together the mix, eggs, butter or oil, and water. I went with butter. And I’ve got a pro-tip for you: separate the egg and whip the whites to soft peaks. Then gently fold them in to the batter. It’s easier than you think and it helps make a lighter, crispier waffle! <\/p>\n\n\n\n

You get a little bit of the starchiness from the ube, but this mix really does make delicious waffles! They’re not too sweet, so it’s great with a little maple syrup and berries, or if you want to go all out, go ahead and make it dessert style, with some whipped cream. <\/p>\n\n\n\n

It’s been interesting to see Trader Joe’s dive into more mochi and rice flour products over the last year. Remains to be seen whether the Mochi Cake Mix <\/a>will make a comeback, but I can tell you, I wasn’t a huge fan of the Kung Pao Mochi Balls<\/a>. <\/p>\n\n\n\n
