The line actually comes in three flavors &#8212; soy sauce, tonkotsu and miso. But I picked this one up at some point before we all went into self-isolation. I&#8217;ve heard good things about the tonkotsu flavor. The noodles aren&#8217;t fried. Instead they&#8217;re put through a triple layer air-drying process. The long and the short of is, it&#8217;s lower in fat. And delivers a chewy noodle closer to fresh quality. I cooked the noodles for three minutes instead of four.<\/p>\n\n\n\n<p>I know lots of folks like to doctor up their ramen&#8230;add a hard boiled egg, some vegetables, etc. But for this taste test, we kept it simple. I like the chewiness of the noodles. The broth has a good, not too salty, soy sauce flavor.
