But it&#8217;s not just <em>where<\/em> it&#8217;s made. With <a href=\"http:\/\/www.pecorinotoscano.it\/en\">Pecorino Toscano DOP,<\/a> all elements must come from the region as well. The DOP mark confirms the milk <em>and<\/em> production process meet the consortium&#8217;s standards and help ensure a unique, high-quality product.<\/p>\n\n\n\n<p>Cheesemaking has a long history in Tuscany, but the creation of the consortium dates back to 1985. Today it comprises 900 farmers (about 200 are members of the consortium), 17 dairies, two cheese ripeners, and a packaging company.  <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img fetchpriority=\"high\" decoding=\"async\" width=\"740\" height=\"987\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/11\/Pecorino-Toscano-wheels.jpg\" alt=\"pecorino toscano wheels\" class=\"lazyload_inited wp-image-18839\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/11\/Pecorino-Toscano-wheels.jpg 740w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/11\/Pecorino-Toscano-wheels-225x300.jpg 225w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/11\/Pecorino-Toscano-wheels-450x600.jpg 450w\" sizes=\"(max-width: 740px) 100vw, 740px\" \/><\/figure>\n\n\n\n<p>The fresh cheese (green label) is aged for a minimum of 20 days, but is typically extended to 45-60 days. It&#8217;s a semi-soft cheese that retains sweet, milky, buttery qualities. The aged version (copper label) matures for at least 120 days.
