It&#8217;s a simple stew that you&#8217;ve gotta have over rice.&nbsp; After researching on the Internet, I grabbed my copy of <a href=\"https:\/\/amzn.to\/2WeF09I\">Koreatown: A Cookbook by Deuki Hong.<\/a> Where most Internet recipes just called for water to create the broth, Hong&#8217;s recipe called for pork stock. Mmmmm.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-18045\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/Kimchi-Jjigae.jpg\" alt=\"kimchi jjigae\" width=\"740\" height=\"987\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/Kimchi-Jjigae.jpg 740w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/Kimchi-Jjigae-225x300.jpg 225w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/Kimchi-Jjigae-450x600.jpg 450w\" sizes=\"(max-width: 740px) 100vw, 740px\" \/><\/p>\n<p>This is straight up comfort food. All the ingredients are basically dropped into a sauce pan to simmer together, so the one extra step of making the pork stock is 100% worth it. It&#8217;s just a matter of simmering pork neck bones in water for a couple of hours with ginger, garlic, doenjang, and green onion added toward the end. Then you move on to the jjigae.<\/p>\n<p><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-18049\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/gochjang-doenjang-gochugaru.jpg\" alt=\"kimchi jjigae ingredients\" width=\"740\" height=\"987\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/gochjang-doenjang-gochugaru.jpg 740w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/gochjang-doenjang-gochugaru-225x300.jpg 225w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/06\/gochjang-doenjang-gochugaru-450x600.jpg 450w\" sizes=\"(max-width: 740px) 100vw, 740px\" \/><\/p>\n<p>If you&#8217;re new to Korean cooking, <a href=\"https:\/\/amzn.to\/2WeF09I\">Koreatown: A Cookbook<\/a> gives a good primer on Korean ingredients, but these are the jangs and the gochugaru you&#8217;ll need for the kimchi jjigae. You&#8217;ll need to hit up an Asian grocery, although more Korean ingredients are showing up on American grocery shelves. The doenjang is similar to miso paste, but doesn&#8217;t use a koji starter.
