Trader Joe&#8217;s Amba Mango Sauce ($3.29) sat next to the sauerkraut and pre-made pastas at my store. The bag simply says it&#8217;s a savory fermented mango sauce and the ingredient list tells us its seasoned with &#8220;garlic, salt, spices, turmeric and paprika.&#8221; Needless to say, I needed to do a little googling.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-17741\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/trader-joes-amba-mango-sauce.jpg\" alt=\"\" width=\"640\" height=\"611\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/trader-joes-amba-mango-sauce.jpg 640w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/trader-joes-amba-mango-sauce-300x286.jpg 300w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/trader-joes-amba-mango-sauce-600x573.jpg 600w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Popular in Israeli, Indian and Middle Eastern cuisine, amba sauce is often served with grilled meats, like kebabs and shawarma. Ha&#8217;aretz offers up <a href=\"https:\/\/www.haaretz.com\/food\/.premium.MAGAZINE-the-delicious-sauce-connecting-indians-israelis-and-palestinians-1.6136021\">the history of amba sauce in Israel,<\/a> relating that it was brought by Iraqi immigrants in the 1950s. In his <a href=\"https:\/\/amzn.to\/2EgBtCc\">Zahav cookbook<\/a>, Chef Michael Solomonov notes that Indian amba is usually chunky, more like a relish. The Arabic version is usually thicker and more viscous with the addition of fenugreek. In <a href=\"https:\/\/amzn.to\/2It28jw\">Jerusalem: A Cookbook<\/a>, Yotam Ottolenghi and Sami Tamimi mention amba as a condiment for sabih, a fried eggplant &#8220;sandwich&#8221; developed by Iraqi Jews who settled near Tel Aviv.<\/p>\n<p><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-17743\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/chicken-and-zucchini-burgers-amba-sauce.jpg\" alt=\"\" width=\"640\" height=\"853\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/chicken-and-zucchini-burgers-amba-sauce.jpg 640w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/chicken-and-zucchini-burgers-amba-sauce-225x300.jpg 225w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2019\/02\/chicken-and-zucchini-burgers-amba-sauce-450x600.jpg 450w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Since eggplants aren&#8217;t truly in season, I tested the sauce with another recipe from the Jerusalem cookbook: <a href=\"https:\/\/ottolenghi.co.uk\/turkey-courgette-burgers-with-spring-onion-cumin-a-shop\">turkey and zucchini burgers with green onion and cumin<\/a>. Though in the past I&#8217;ve used turkey, this time I went with ground chicken since it&#8217;s what I had on hand. Both work well.\u00a0 The amba is definitely tangy, a little funky and great for dipping or drizzling over the burgers. This is NOT a sweet mango chutney.
