There have been some pretty impressive bakes and a whole lotta butter spread across several feeds. The two challenges for the month were Blackberry and Star Anise Friands (p. 103) and Take Home Chocolate Cake (p. 152).<\/p>\n<p>I don&#8217;t consider myself an accomplished baker by any stretch, but I can follow directions like nobody&#8217;s business. What I learned over the several bakes I tackled was that it&#8217;s worth it to get new, nonstick pans and have plenty of parchment paper and butter on hand.<\/p>\n<p>Here are some of my favorites. This is another great recipe from Sweet by @ottolenghi and @helen_goh_bakes. Just tasting this batter with the saffron infused melted butter with honey was enough to know these were not going to be your standard madeleines. They baked up perfectly, got coated in honey, dipped in chopped pistachios then made to stand and pose for me like little cookie soldiers. Next up I\u2019m feeling something fruity or rhubarby. Tender lemony mini almond cakes are studded with juicy blueberries and crowned with a blanket of snowy white icing and blueberry jewels. A basket of blueberries sat on my counter beckoning me to bake something today from Sweet, and I was torn between this dessert, and another cake, but the mini size and beauty of these won me over. These are so fantastic. Tender, bright, sweet, and a hint of tartness these are so easy to make and yet feel indulgent and special. I used @bobsredmill almond flour instead of almond meal and they turned out so tender! Wouldn\u2019t these be great for an after dinner dessert with company?! Take-home chocolate cake with chocolate ganache &amp; espresso cinnamon mascarpone cream by @helen_goh_bakes &amp; @ottolenghi from their book Sweet which is #rainydaybitescookbookclub pick for this month &#8211; It\u2019s basically the fudgiest cake I have ever had &#8211; we shared it with friends &amp; all agreed. It called for dark chocolate but I used semi sweet throughout bc thats what I had on hand and it worked!! It\u2019s so easy to make &#8211; all made in one bowl and the ganache is fabulous as you can see!! The cream was delicious on its own but the majority of us loved the cake as is without it.
