It\u2019s not even so much about the food, it\u2019s about a change of scenery.<\/p>\n<p>I have to admit, until recently, I\u2019ve more or less been tethered to my desk, a lot of the time just feeling the need to be available at a moment\u2019s notice. And even now, when that urgency no longer exists, I\u2019ve still been in the habit of sitting in my office to eat. The rainy days don\u2019t help much, either.<\/p>\n<p>Am I the only one? #NotaSadDeskLunch says I&#8217;m not.\u00a0So as part of this sandwich series, I\u2019m vowing to get out from behind my desk, and even if I can\u2019t go outside, I\u2019m at least going to step away from the computer and eat somewhere else. From my point of view, the food is still an important part of the experience. It doesn\u2019t make sense to get the change of scenery and still mindlessly cram whatever passes for edible that day into my face. Add the garlic and pepper flakes and cook for ~1 minute until fragrant. Add the kale in batches, allowing it to just wilt and make room in the pan. Add the chicken broth, raisins and sugar. Simmer for ~7 minutes, stirring occasionally, until the kale is cooked down and the raisins are plumped up. Add the vinegar and cook for 1-2 more minutes. Season with salt and pepper to taste.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">3<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>!Red Onion Jam<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">4<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>In a large skillet, melt butter over medium-low heat. Add onions and bay leaf, stirring occasionally until onions are soft and just caramelized, about 20 minutes. Add sugar, salt, pepper and red pepper flakes and cook for another 10 minutes.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">5<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>Add wine and vinegar and simmer until liquid becomes syrupy, about 15 minutes. Remove bay leaf and let jam cool. It\u2019ll store in a the fridge for up to 2 weeks.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">6<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>!Quick Pickled Red Onions<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">7<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>Put onions and garlic in a heat proof bowl.<\/p>\r\n\t\t\t\t<\/div>\r\n\t\t\t<\/div>\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\r\n\t\t\t\t\t\t\t\t\t<div class=\"step\">\r\n\t\t\t\t<span class=\"step-number\">8<\/span>\r\n\t\t\t\t<div class=\"step-content\">\r\n\t\t\t\t\t<p>Combine sugar, salt and vinegar in a 2 qt. sauce pan. Bring to a boil over medium heat, stirring to dissolve the sugar and salt. Pour the vinegar mixture over the onions and garlic and let sit for 30 minutes. Squeeze some of the liquid out of the kale and layer it on the bottom of the ciabatta. Add three slices mozzarella. Sprinkle with sea salt to taste. One bunch of kale will make enough for two sandwiches. If you're making it as a side dish, use at least two bunches to serve 3-4 people.
