Winners get a $25 gift certificate and their pizza is featured for the week on the happy hour menu at <a href=\"http:\/\/www.seriouspieseattle.com\" target=\"_blank\" rel=\"noopener\">Serious Pie<\/a>. I submitted a couple of ideas the first week and won with a cherry, speck and mozzarella combo. The wheels kept turning in my head\u00a0and this flatbread was born.<\/p>\n<p><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-12663\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2015\/06\/pancetta-fig-haloumi-pizza-table.jpg\" alt=\"pancetta fig haloumi pizza\" width=\"458\" height=\"691\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2015\/06\/pancetta-fig-haloumi-pizza-table.jpg 458w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2015\/06\/pancetta-fig-haloumi-pizza-table-199x300.jpg 199w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2015\/06\/pancetta-fig-haloumi-pizza-table-398x600.jpg 398w\" sizes=\"(max-width: 600px) 100vw, 458px\" \/><\/p>\n<p>So here&#8217;s the lowdown. You do need to grill the haloumi cheese first &#8212; it absolutely makes a difference. When it comes to pizza, I live and die by my Baking Steel, but if you&#8217;d rather not turn on the oven, you could certainly do the whole thing on the grill. Either way, why not throw on some extra vegetables while you&#8217;re out there? As usual, <a href=\"http:\/\/www.seriouseats.com\/recipes\/2012\/07\/basic-new-york-style-pizza-dough.html\" target=\"_blank\" rel=\"noopener\">the dough is Kenji&#8217;s NY Style<\/a>\u00a0boosted with 2 t. of diastatic malt powder (optional). The malt adds flavor and purports to help finished bread loaves last longer. Pizza never stays around long enough to test staying power, but I can attest that it does make a difference in bread.<\/p>\n<p><img src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/plugins\/trx_addons\/components\/lazy-load\/images\/placeholder.png\" data-trx-lazyload-height style=\"height: 0; padding-top: 100%;\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-12664\" data-trx-lazyload-src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2015\/06\/pancetta-fig-haloumi-pizza-with-wine.jpg\" alt=\"pancetta fig haloumi pizza with wine\" width=\"500\" height=\"500\"   \/><\/p>\n<p>The wine is poured, the pizza is done.
