When I say we, I mean mostly me, my mom and my aunties. On my lunch breaks at work, I sat in the breakroom, folding, folding, folding.\u00a0 After hundreds, you start to get pretty good at folding. But it takes hundreds.\u00a0 That said, you don\u2019t have to be an origami master to make some nice gyoza.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2014\/01\/14\/how-to-fold-gyoza\/gyoza-from-japanese-soul-cooking-negi-dailywaffle\/\" rel=\"attachment wp-att-11750\"><img class=\"lazyload_inited\" decoding=\"async\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2014\/01\/Gyoza-from-Japanese-Soul-Cooking-Negi-dailywaffle-397x600.jpg\" alt=\"Gyoza from Japanese Soul Cooking Negi| dailywaffle\" width=\"397\" height=\"600\" \/><\/a><\/p>\n<p>Most recipes I\u2019ve seen for potstickers, or egg rolls for that matter, simply allow you to use green onion and leave it at that. This recipe, from <a href=\"http:\/\/www.amazon.com\/gp\/product\/1607743523\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1607743523&amp;linkCode=as2&amp;tag=daily0447-20&amp;linkId=X26FJYNB7TBUNRUN\" rel=\"nofollow\">Japanese Soul Cooking<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=daily0447-20&amp;l=as2&amp;o=1&amp;a=1607743523\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/> calls for <a href=\"http:\/\/en.wikipedia.org\/wiki\/Allium_tuberosum\" target=\"_blank\" rel=\"noopener\"><i>nira<\/i>, green garlic chives<\/a>. Yes, you\u2019ll need to hit up an Asian market, but it\u2019s worth it. Mostly a flat, grassy leaf, you chop off the bottom couple inches of the stalk and use the leaves. \u00a0The other ingredient in the recipe you might not recognize is <em>katakuriko<\/em>, or potato starch. \u00a0You can pick that up at your Asian market as well, or, like me, just use Bob&#8217;s Red Mill&#8217;s potato starch.<\/p>\n<p style=\"text-align: left;\"><span style=\"color: #c83648;\"><strong><a title=\"Pork Gyoza from Japanese Soul Cooking\" href=\"http:\/\/www.seriouseats.com\/recipes\/2013\/12\/pork-gyoza-recipe-from-japanese-soul-cooking-cookbook.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #c83648;\">RECIPE: Pork Gyoza from Japanese Soul Cooking<\/span><\/a><\/strong><\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2014\/01\/14\/how-to-fold-gyoza\/gyoza-from-japanese-soul-cooking-folded-dailywaffle\/\" rel=\"attachment wp-att-11749\"><img class=\"lazyload_inited\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2014\/01\/Gyoza-from-Japanese-Soul-Cooking-folded-dailywaffle.jpg\" alt=\"Gyoza from Japanese Soul Cooking folded| dailywaffle\" width=\"500\" height=\"331\" \/><\/a><\/p>\n<p>Making the filling is simply a matter of mincing a few ingredients and mixing them with the pork and a little soy sauce and potato starch, so let&#8217;s get down to the folding, since that may be the thing holding you back from trying dumplings at home. Japanese Soul Cooking includes a photo tutorial, but if you&#8217;ve never done this, a quick and dirty video might help. (Emphasis on quick and dirty).<\/p>\n<div style=\"width: 640px;\" class=\"wp-video\"><video class=\"wp-video-shortcode\" id=\"video-11746-1\" width=\"640\" height=\"424\" preload=\"metadata\" controls=\"controls\"><source type=\"video\/mp4\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2014\/01\/How-to-Fold-Gyoza-dailywaffle.mp4?_=1\" \/><a href=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2014\/01\/How-to-Fold-Gyoza-dailywaffle.mp4\">https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2014\/01\/How-to-Fold-Gyoza-dailywaffle.mp4<\/a><\/video><\/div>\n<p>A few folding tips:<\/p>\n<p>1.The recipe in the book suggests each wrapper be filled with about 1 tablespoon of filling, but for the wrappers I had, it was more like 1.5 teaspoons.<\/p>\n<p>2. When flat, you want to make sure you have an ample ring of wrapper around the filling so that it doesn&#8217;t goosh out the sides when you go to fold it.<\/p>\n<p>3. If you&#8217;re folding solo, keep the pan of folded gyoza covered with a towel to keep the edges from drying out.
