Maybe you\u2019ll have roasted Brussels sprouts this year instead of green beans. Maybe you\u2019ll make apple pie in addition to pumpkin, but fundamentally, it\u2019s the meal you grew up with.\u00a0 The point is, you know what you\u2019re making or eating for Thanksgiving. The question is, what will you eat between now and then?<\/p>\n<p>We have a week and a half of desk lunches to face before Thanksgiving fires the official starting gun for BS2 &#8212; that&#8217;s &#8220;Big Sweater Season.&#8221; Before you let it all go until January, have a look at this jeweled butternut couscous salad.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/11\/18\/pomegranate-dried-cherry-butternut-couscous-salad\/butternut-couscous-with-cherries-and-pomegranate-3-dailywaffle\/\" rel=\"attachment wp-att-11580\"><img class=\"lazyload_inited\" decoding=\"async\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/11\/butternut-couscous-with-cherries-and-pomegranate-3-dailywaffle.jpg\" alt=\"butternut couscous with cherries and pomegranate | dailywaffle\" width=\"500\" height=\"755\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Another roasted butternut salad? \u00a0Yes, you&#8217;ve seen a <a title=\"Fall Salad\/Side Dish: Butternut Quinoa with Cranberries &amp; Pepitas\" href=\"https:\/\/dailywaffle.com\/stage1\/2012\/10\/25\/butternut-quinoa-with-cranberries-pepitas\/\">butternut quinoa version<\/a> on these very pages. \u00a0My chief complaint with couscous salads is that so often they&#8217;re bland.\u00a0Where this one takes an interesting turn is in the layering of flavors. \u00a0A couple of extra steps take this salad from ho-hum to oh-my, infusing it with the flavors of fall. \u00a0So this is where I ask you not to skip browning up the onions, really browning them. The reward is a sweet earthiness then combined with cinnamon, a fresh kick of mint and parsley, followed by the sweet tart of dried sour cherries offset by the tang of pomegranate. \u00a0Ottolenghi-inspired, this salad comes from an unexpected place &#8212; a mashup of two facing pages in an old copy of the first <a href=\"http:\/\/www.amazon.com\/gp\/product\/B009JU5I9U\/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B009JU5I9U&amp;linkCode=as2&amp;tag=thedaiwaf-20\">Ottolenghi Cookbook.<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=thedaiwaf-20&amp;l=as2&amp;o=1&amp;a=B009JU5I9U\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/> You never know where inspiration will come from. \u00a0Any which way, this salad is best served with the chill taken off. Roast for 15 minutes, then turn gently and roast for another 10-15 minutes until a knife slides easily into the squash.
