We doubled up the skewers and had half the veg for dinner with the other half headed for this pasta salad the next day.<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/07\/01\/quick-hit-halloumi-grilled-vegetable-pasta-salad\/mediterreanean-grilled-vegetable-pasta-salad-dailywaffle\/\" rel=\"attachment wp-att-11000\"><img decoding=\"async\" class=\"lazyload_inited aligncenter\" title=\"Halloumi and Grilled Vegetable Pasta Salad\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/07\/mediterreanean-grilled-vegetable-pasta-salad-dailywaffle.jpg\" alt=\"mediterreanean grilled vegetable pasta salad| dailywaffle\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p>A couple of notes &#8211; I threw in a chicken breast from Friday night, which isn&#8217;t included in the recipe below. \u00a0It&#8217;s literally just a chicken breast seasoned with Penzey&#8217;s Lemon Pepper mix, cooked in a bit of olive oil. \u00a0Totally optional, you can keep this vegetarian without the chicken.<\/p>\n<p>On the halloumi, Trader Joe&#8217;s carries a 7 oz. package of halloumi for $4.99.
