The thing I wait all year (er, 3 or 4 months) for is a batch of <a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/04\/02\/hot-cross-buns\/\" target=\"_blank\">Hot Cross Buns<\/a>.<\/p>\n<p>And what is it that makes a Hot Cross Bun so deliciously dunkable in your morning cup of joe? The candied and dried fruit.\u00a0 But have you noticed candied orange and lemon peel can cost an arm and a leg?\u00a0 Last year I bought tiny tubs of both for $8.50 a piece! Granted, you don\u2019t use a huge amount in the buns, but there\u2019s no reason to drop that kind of dough. Making candied citrus peel is dead simple.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/03\/03\/hippity-hop-hop-easters-on-its-way-candied-citrus-peel\/candied-orange-peel-fruit-dailywaffle\/\" rel=\"attachment wp-att-10474\"><img class=\"lazyload_inited\" decoding=\"async\" alt=\"candied orange peel fruit| dailywaffle\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/candied-orange-peel-fruit-dailywaffle.jpg\" width=\"500\" height=\"331\" \/><\/a><\/p>\n<p style=\"text-align: left;\">If you\u2019ve got a neighbor who keeps dropping off bags of lemons on your doorstep (I\u2019m so jealous!) or if you\u2019ve just been going through as much citrus as we have, you\u2019ve got plenty of peels to candy.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/03\/03\/hippity-hop-hop-easters-on-its-way-candied-citrus-peel\/candied-orange-peel-drying-dailywaffle\/\" rel=\"attachment wp-att-10476\"><img class=\"lazyload_inited\" decoding=\"async\" alt=\"candied orange peel drying| dailywaffle\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/candied-orange-peel-drying-dailywaffle.jpg\" width=\"400\" height=\"604\" \/><\/a><\/p>\n<p>The citrus you choose doesn\u2019t much matter.\u00a0 I used 3-4 blood oranges (and a couple of Eureka lemons) because that\u2019s what I had around. The red blush will leech out of the skins, but the color is neither here nor there. For Hot Cross Buns, a combo orange and lemon is key, as are golden raisins and candied ginger.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/03\/03\/hippity-hop-hop-easters-on-its-way-candied-citrus-peel\/candied-orange-peel-2-dailywaffle\/\" rel=\"attachment wp-att-10473\"><img src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/plugins\/trx_addons\/components\/lazy-load\/images\/placeholder.png\" data-trx-lazyload-height style=\"height: 0; padding-top: 66.2%;\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10473\" alt=\"candied orange peel 2| dailywaffle\" data-trx-lazyload-src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/candied-orange-peel-2-dailywaffle.jpg\" width=\"500\" height=\"331\"   \/><\/a><\/p>\n<p>There are two ways to candy peels, the easy way and the 3-day way. \u00a0I chose the <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Candied-Grapefruit-Peel-104425\" target=\"_blank\">simpler of the two recipes I found on Epicurious<\/a>.\u00a0The most important thing is getting rid of the bitterness in the peel. You\u2019ll bring the peels to a boil and drain them \u2013 four times. Don\u2019t cheat and only do two rounds \u2013 the peels will be bitter. No really, they will.<\/p>\n<p>Once dunked four times over and then cooked in a double-strength simple syrup, you\u2019ll dry them on a rack for eight hours and then toss them in sugar. From there, you can make your Hot Cross Buns or throw them into <a href=\"https:\/\/dailywaffle.com\/stage1\/2012\/10\/11\/rosemary-cornmeal-pine-nut-biscotti\/\" target=\"_blank\">some biscotti<\/a>. If you leave them out for longer than eight hours, they&#8217;ll continue to dry and get a little chewier. Still, after putting them in airtight container, you might find the sugar virtually absorbed. No matter, just give them another toss in sugar before using them, if you like. They&#8217;ll keep in the fridge for a month.
