{"id":10454,"date":"2013-02-26T21:28:53","date_gmt":"2013-02-27T05:28:53","guid":{"rendered":"https:\/\/dailywaffle.com\/stage1\/?p=10454"},"modified":"2016-10-13T16:42:25","modified_gmt":"2016-10-13T23:42:25","slug":"dahlia-bakery-english-muffins","status":"publish","type":"post","link":"https:\/\/dailywaffle.com\/stage1\/dahlia-bakery-english-muffins\/","title":{"rendered":"Dahlia Bakery English Muffins"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>When I heard Tom Douglas was going to be at Costco signing copies of the <a href=\"http:\/\/www.amazon.com\/gp\/product\/B009YM5BXQ\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B009YM5BXQ&amp;linkCode=as2&amp;tag=daily0447-20&amp;linkId=X6IW4OSRRJMNDVTA\" rel=\"nofollow\">Dahlia Bakery Cookbook<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=daily0447-20&amp;l=as2&amp;o=1&amp;a=B009YM5BXQ\" alt=\"\" width=\"1\" height=\"1\" border=\"0\" \/>a couple of months ago, I expected organized chaos a la Giada de Laurentiis\u2019 signing. I rolled in about 30 minutes before it was slated to start and Tom was already there. No need to pre-purchase a book, get in line outside and have a handler scribble your name on a post-it for the inscription.\u00a0 I walked right up, got a book (one for me, and one for my mom), had a chance to have a little chat with Tom and then was on my merry way for the rest of my Costco shop.<\/p>\n<p><!--more-->Tom recommended the <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Peanut-Butter-Sandwich-Cookies-aka-The-Nora-Ephron-51129000\" target=\"_blank\">Nora Ephron Peanut Butter sandwich cookies<\/a> as a must make from the book, but these English muffins are the first I\u2019ve baked from it. And as per usual, I didn\u2019t pick the easiest or quickest thing.\u00a0 So fair warning, these muffins take time.\u00a0 Unless you\u2019re home all day on a weekend, make the dough one day and bake them the next.<\/p>\n<p>We\u2019ve made English muffins before, using <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/english-muffins-recipe\/index.html\" target=\"_blank\">Alton Brown\u2019s recipe<\/a>, but those are cooked in rings on the stove. The Dahlia Bakery version is a whole different beast with mashed potato and multiple rises required. Completely worth it, these muffins are delicious, but you should know what you\u2019re getting into.<\/p>\n<p>The great thing is Tom and his co-author Shelley Lance have put the time into detailing the directions, down to telling you what temperature the water and resulting dough should be for optimum results. You\u2019re not left to guess at any point in the process. Cup your hand over a piece of dough and roll in a circular motion against the board. This dough is definitely stickier, so you\u2019ll need a well-floured surface, but it\u2019s pretty easy.\u00a0 At first the dough will want to ooze a bit between your fingers, but keep your fingers tight and after a few circular motions, it starts to come together.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/02\/26\/dahlia-bakery-english-muffins\/dahlia-bakery-english-muffin-pan-dailywaffle\/\" rel=\"attachment wp-att-10457\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-10457\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/dahlia-bakery-english-muffin-pan-dailywaffle.jpg\" alt=\"dahlia bakery english muffin pan | dailywaffle\" width=\"400\" height=\"604\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/dahlia-bakery-english-muffin-pan-dailywaffle.jpg 400w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/dahlia-bakery-english-muffin-pan-dailywaffle-198x300.jpg 198w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/dahlia-bakery-english-muffin-pan-dailywaffle-397x600.jpg 397w\" sizes=\"(max-width: 600px) 100vw, 400px\" \/><\/a><\/p>\n<p>Once they go in the oven, you flip them half way through, given them a firm pat and finish the baking. I worried that they weren\u2019t browning, but once you flip them over, you\u2019ll see the bottoms have browned up. Toasted, then topped with Beecher\u2019s flagship and put under the broiler until the cheese was just melty, and finished with a dollop of chile jam.
