I have fallen completely, utterly and irrevocably in love. We are M-F-E-O (made for each other). My husband? What? \u00a0No, I met him in a bar.\u00a0 I\u2019m talking about the Baking Steel.<\/p>\n<p><!--more-->For years I\u2019ve used a baking stone \u00a0to make pizza at home. I fumbled around at 425F for awhile, then discovered I should probably be cranking up the oven as high as it would go. The stone works fine, better than a sheet pan, that\u2019s for sure.\u00a0 You can get some decent color on the crust. But if that baking stone is my Walter, the Baking Steel is my Sam.\u00a0 (Stick with me people, you\u2019ve seen Sleepless in Seattle, right?)<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/02\/13\/be-my-pizza-spinaci-valentine\/baking-steel-dailywaffle\/\" rel=\"attachment wp-att-10440\"><img fetchpriority=\"high\" decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-10440\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/baking-steel-dailywaffle.jpg\" alt=\"baking steel | dailywaffle\" width=\"500\" height=\"331\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/baking-steel-dailywaffle.jpg 500w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/baking-steel-dailywaffle-300x198.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 500px\" \/><\/a><\/p>\n<p>The\u00a0<a href=\"http:\/\/www.bakingsteel.com\" target=\"_blank\">Baking Steel<\/a> is a whole different ball game. After reading\u00a0<a href=\"http:\/\/slice.seriouseats.com\/archives\/2012\/09\/the-pizza-lab-the-baking-steel-delivers.html \" target=\"_blank\">Kenji\u2019s review on Serious Eats<\/a>, the Baking Steel\u00a0went on my Christmas list. \u00a0The idea is almost too intuitive. Steel conducts and holds an amazing amount of heat, so duh, it&#8217;ll compensate for the comparatively low temperatures of a home oven. From the first pie I made \u2013 a whole wheat crust I\u2019m still working on, it was game over for the pizza stone.\u00a0 And once I used Kenji&#8217;s\u00a0<a href=\"http:\/\/www.seriouseats.com\/recipes\/2010\/10\/new-york-style-pizza.html\" target=\"_blank\">New York Style crust recipe<\/a>, I was a goner. \u00a0Hook, line and sinker.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/02\/13\/be-my-pizza-spinaci-valentine\/pizza-spinaci-2-dailywaffle\/\" rel=\"attachment wp-att-10432\"><img decoding=\"async\" class=\"lazyload_inited aligncenter\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/pizza-spinaci-2-dailywaffle.jpg\" alt=\"pizza spinaci 2 | dailywaffle\" width=\"500\" height=\"500\" \/><\/a><\/p>\n<p>Roll the dough out thinly and once baked, it holds its shape, no floppy ends here.\u00a0 Let the dough cold ferment for a few days in the fridge and you\u2019ll get even better air bubble development and a nice chew. I kid you not, this thing is a rock star.\u00a0 It pays for itself in 3 large pizzas or so (the good place here runs about $25 a pizza, it ain\u2019t cheap).<\/p>\n<p>Over the weekend, on dough on just 24 hours in the fridge, we made a <a href=\"http:\/\/instagram.com\/p\/ViiDruIajW\/\" target=\"_blank\">garlicky spinach pizza<\/a> a la Tomasso\u2019s in San Francisco. It&#8217;s an Italian-American joint in the midst of a bunch of strip clubs in North Beach, and they serve a damn good pizza spinaci. In my version, the sauce is crushed tomatoes sprinkled with dried oregano and salt and it&#8217;s topped with part skim mozzarella.\u00a0 Fresh spinach is tossed with super thin slices of garlic and goes on just after the pizza comes out of the oven. Grate parmesan cheese over the top and you hardly need a side salad.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/02\/13\/be-my-pizza-spinaci-valentine\/pizza-spinaci-3-dailywaffle\/\" rel=\"attachment wp-att-10433\"><img class=\"lazyload_inited\" decoding=\"async\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/pizza-spinaci-3-dailywaffle.jpg\" alt=\"pizza spinaci 3 | dailywaffle\" width=\"500\" height=\"331\" \/><\/a><\/p>\n<p style=\"text-align: left;\">This pie is a personal size done on dough fermented for 4 days in the fridge. I was in a rush, so it didn&#8217;t rest on the counter as long as it probably should have. You can see a little bit of the development in the cross-section. These little guys certainly puffed up more than the large pie we made on Saturday with just one day&#8217;s rise.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/02\/13\/be-my-pizza-spinaci-valentine\/pizza-heart-front-and-back-dailywaffle\/\" rel=\"attachment wp-att-10437\"><img src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/plugins\/trx_addons\/components\/lazy-load\/images\/placeholder.png\" data-trx-lazyload-height style=\"height: 0; padding-top: 49.586776859504%;\" loading=\"lazy\" decoding=\"async\" data-trx-lazyload-src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/02\/pizza-heart-front-and-back-dailywaffle.jpg\" alt=\"pizza heart front and back | dailywaffle\" width=\"605\" height=\"300\" \/><\/a><\/p>\n<p>Now with Valentine\u2019s Day this week, I tried to cut out little pepperoni hearts, but didn\u2019t have a cookie cutter small enough or sharp enough. So instead, with my usual amazing rolling out pizza dough skills I managed to make this pizza valentine.
