Layer on layer of pork \u2013 roasted loin, ham and salami with Swiss cheese, pickles and a schmear of mustard, pressed like a panini until the cheese is melty. On the West Coast, unless you\u2019re at a Cuban restaurant, it\u2019s not a sandwich you see all that often. There are exceptions \u2013 the last one I had was actually a couple of years ago at Matt\u2019s in the Market here in Seattle. We also have a Caribbean place called Paseo that\u2019s supposed to have a great Cubano-like sandwich.\u00a0 But really, there&#8217;s no reason you can&#8217;t make a pretty good Cubano, or \u00a0perhaps more accurately here, a <em>medianoche<\/em> sandwich at home. (The main difference is the bread).<\/p>\n<p>The mojo(ish)-marinated pork started as tacos for Saturday night\u2019s dinner, but as I thought about the leftovers, Cubano-inspired pulled pork sliders seemed like the perfect lunch for us and a great idea for the Super Bowl next weekend.<\/p>\n<p><!--more--><\/p>\n<p>The bottled bitter orange (or sour orange) marinade is key. For carnitas I usually use fresh squeezed juice, but the the bottled marinade is more intense than straight citrus, \u00a0and it\u2019ll come in handy if you ever want to <a href=\"http:\/\/www.thekitchn.com\/recipe-braised-chicken-with-mojo-sauce-recipes-from-the-kitchn-176329\" target=\"_blank\" rel=\"noopener noreferrer\">recreate the garlic chicken from Versailles in LA<\/a>. \u00a0As for what brand to get, the Latin American market at Pike Place only carried Goya, the recipe on theKitchn recommended La Lechonera.<\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/2013\/01\/27\/cubano-inspired-pulled-pork-sliders\/bitter-orange-marinade-dailywaffle\/\" rel=\"attachment wp-att-10328\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-10328\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/bitter-orange-marinade-dailywaffle.jpg\" alt=\"bitter orange marinade| dailywaffle\" width=\"400\" height=\"604\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/bitter-orange-marinade-dailywaffle.jpg 400w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/bitter-orange-marinade-dailywaffle-198x300.jpg 198w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/bitter-orange-marinade-dailywaffle-397x600.jpg 397w\" sizes=\"(max-width: 600px) 100vw, 400px\" \/><\/a><\/p>\n<p>Once you&#8217;ve done the pork in the slow cooker (easy peasy), the rest is just a matter of assembling ingredients. King&#8217;s Hawaiian rolls provide a nice sweetness that complements the pork. \u00a0The addition of salame is apparently a thing in Tampa, but isn\u2019t done in Miami.\u00a0 In Seattle, I\u2019m down with the salame.<\/p>\n<p>Like I said, a real Cubano is pressed, but for a Super Bowl get together, you want to enjoy the game, or else the commercials, not man a panini press. \u00a0Trying to melt the cheese over the pork one-by-one in a pan was an exercise I didn\u2019t have much patience for and in the end only yielded sort-of melty cheese that quickly gets congealy (meh). \u00a0For sliders at a party, let\u2019s just honor the flavors. Season the pork with cumin and salt and put it on top of the onions. Pour over the bitter orange marinade, orange and lime juice. Add the garlic. Cover and cook on high for 6-8 hours. There won't be much liquid left, but it shouldn't be completely dry.
