How many of those books do you cook from and how many do you just skim now and again? There\u2019s no crime in cookbook as lookbook, but I have to believe most authors are hoping you\u2019ll actually make the recipes. With <a href=\"http:\/\/www.amazon.com\/gp\/product\/1607743949\/ref=as_li_ss_tl?ie=UTF8&amp;tag=thedaiwaf-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1607743949\">Yotam Ottolenghi and Sami Tamimi\u2019s Jerusalem<\/a><img decoding=\"async\" style=\"border: none !important;margin: 0px !important\" alt=\"\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=thedaiwaf-20&amp;l=as2&amp;o=1&amp;a=1607743949\" width=\"1\" height=\"1\" border=\"0\" \/>, the photos are gorgeous. It would be easy to let it just be a lookbook. But you&#8217;d be missing out. To get us cooking, not just looking, Beth of <a href=\"http:\/\/www.omgyummy.com\" target=\"_blank\">omgyummy<\/a> and her friend Sarene have created a virtual cooking community centered around Jerusalem, where we\u2019ll be cooking from the book, sharing our results and talking ingredients. Ahead of official kick-off, on Sunday I made the Barley Risotto with Marinated Feta.<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/dailywaffle.com\/stage1\/?attachment_id=10247\" rel=\"attachment wp-att-10247\"><img decoding=\"async\" class=\"lazyload_inited aligncenter size-full wp-image-10247\" alt=\"jerusalem barley risotto|dailywaffle\" src=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/jerusalem-barley-risottodailywaffle.jpg\" width=\"400\" height=\"604\" srcset=\"https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/jerusalem-barley-risottodailywaffle.jpg 400w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/jerusalem-barley-risottodailywaffle-198x300.jpg 198w, https:\/\/dailywaffle.com\/stage1\/wp-content\/uploads\/2013\/01\/jerusalem-barley-risottodailywaffle-397x600.jpg 397w\" sizes=\"(max-width: 600px) 100vw, 400px\" \/><\/a><\/p>\n<p>But for the smoked paprika, this could have been a tomatoey Italian barley dish. It\u2019s a good reminder that at least for a first run through, get the ingredients called for in the recipe. Don\u2019t cut corners and use sweet paprika because you already had it in the cupboard. As my mom used to say, \u201cDo it right the first time.\u201d And then after that, do whatever the hell you want. (Ok, she didn\u2019t say that part\u2026or maybe she did).<\/p>\n<p>I got the barley going just as the Seahawks game was getting started so every 15 minutes I was running back into the kitchen to give the pot a stir. Toward the end, you\u2019ll want to be close to the stove to ensure things don\u2019t start sticking and burning. I did go the full 45 minutes, but the last 15 was really touch and go as the barley finished absorbing the tomato mixture. At 30-35 I would have had a little more soupiness. Next time.<\/p>\n<p>I\u2019d forgotten the caraway seeds (so much for &#8220;do it right the first time&#8221;!), so the first night we simply had the risotto topped with plain feta alongside some improvised beef and pork kofte with a side of roasted cauliflower.\u00a0 Later I picked up the caraway seeds, toasted them and let them sit in the olive oil for a bit and then drizzled it over the feta before serving.
