We Tried Trader Joe’s Ube Mochi Pancake & Waffle Mix

You can’t have a blog called DailyWaffle without making Trader Joe’s Ube Mochi and Pancake Mix into waffles. The great part about this mix is, a box makes 6 waffles (or 12 pancakes), and it gives you instructions for making just 2, if that’s all you want.

I opted to go with Belgian waffles, and it’s just a matter of stirring together the mix, eggs, butter or oil, and water. I went with butter. And I’ve got a pro-tip for you: separate the egg and whip the whites to soft peaks. Then gently fold them in to the batter. It’s easier than you think and it helps make a lighter, crispier waffle!


You get a little bit of the starchiness from the ube, but this mix really does make delicious waffles! They’re not too sweet, so it’s great with a little maple syrup and berries, or if you want to go all out, go ahead and make it dessert style, with some whipped cream.

I mean, who’d pass that up?

It’s been interesting to see Trader Joe’s dive into more mochi and rice flour products over the last year. Remains to be seen whether the Mochi Cake Mix will make a comeback, but I can tell you, I wasn’t a huge fan of the Kung Pao Mochi Balls.
