We Tried Trader Joe’s Stroopwafel Cake Mix

Trader Joe’s Stroopwafel Cake Mix might be my fave new product of the 2020 Holiday Season. The one I would seriously like to see show up at other times of the year. I mean, they carry the little stroopwafel cookies all year, and bust out the big ones in a tin for Christmas, so why not?

We’re trying to keep our holiday baking to a minimum, since no one’s going into an office with the extras, so this week it was between the Bacardi Cake someone posted on r/OldRecipes and this one. The Stroopwafel won out.


This one’s simple — just add butter, 3 eggs, and water and bake it in a loaf pan. Although the directions say to just spray the loaf tin with nonstick spray, I wasn’t taking any chances, even with 1 1/4 sticks of butter. So I lined the tin with parchment and got to work.

You’re gonna set aside about 1/4 of the stroopwafel pieces at the top of the jar, so pick the one with the biggest pieces you can find. I just used a spoon to combine the softened butter, eggs and water, but I might use the hand mixer next time. Just make sure everything is as well combined as it can be before you add the dry mix. That’s where you don’t want to overmix it.

It baked at 350F for 55 minutes, until a toothpick came out clean. Let it cool for 30 mins and then have it. f you want to make cupcakes instead of the loaf, I’d pick up a package of the small stroopwafels (not in a tin) to decorate. My best guess at cupcake timing, would be to start at 18 minutes, like you would with a regular cake mix.

It makes a deliciously moist, buttery cake (I know people hate that word, but I make an exception for cake). No one wants a dry one. It’s caramelly without being too sweet. Even the end piece is good! @jenn.denn on IG mentioned she added banana for a crazy delicious spin on banana bread.

If you’ve been on the fence about Trader Joe’s Stroopwafel Cake Mix, I think you gotta grab one next time you roll through TJ’s. I know holiday items are moving fast, but at least at my store, it seemed to be less popular than the Peppermint Chocolate Cookie Mix. With any luck we’ll see it again before next Christmas. Fingers crossed!
