There’s a Shrimp Version, Too

Summer rolls, spring rolls, fresh rolls, whatever you call them, they’re delish. Trader Joe’s Spring Rolls come in two varieties: tofu and shrimp. But because I was a little leery about shrimp, I went with the tofu version. Two to a package for $5.49, they come with a cashew dipping sauce. It’s a little like a peanut sauce with a hit of Thai chili sauce mixed in.


TJ’s filling includes lettuce, carrot, a little red cabbage, a little mint, and mung bean noodles along with the tofu. I could have used a little more noodle in the mix, but that’s just personal preference. The rice paper was in good shape, hydrated enough, except one one corrner on one roll, which was a little firm. But definitely check them out when you pick your box. A couple packages I looked at had tears in the rice paper. You get a good amount of cashew sauce for two rolls, so I don’t think you’ll run out. I could see using the rest on a salad.

They’re not marked vegan, but appear to be, except for possibly the cane sugar in the sauce. So you’re probably in the clear with the rolls themselves.

I have made own summer rolls with tofu and quinoa and some veg, but the convenience of TJ’s is worth it if you’re not looking to roll a bunch. Would I buy Trader Joe’s Spring Rolls with Tofu again? Yeah, probably. It’s a light, refreshing snack and you’re getting some veg. What’s not to like?
