We Tried Trader Joe’s Corn Cookie Mix

Nothing says summer like corn on the cob. But instead of just keeping it in the produce section, Trader Joe’s Corn Cookie Mix is hitting shelves now. It’s essentially a cross between cornbread and a sugar cookie.

Trader Joe’s Corn Cookie mix makes 24 cookies.

TJ’s isn’t messing around. A batch of 24 cookies calls for the container of cookie mix, 2 sticks of butter and an egg. I used a standard electric hand mixer, and it did take a few minutes to get the dough to come together, as you’ll see in the video below.


They’re on the sweet side, so while it’s tempting to add rainbow sprinkles, sanding sugar, or even dip them in chocolate, I’d leave them be. They’re tasty on their own.

Then again, they might be good for ice cream sandwiches.

What everyone wants to know is how they compare to Milk Bar’s Corn Cookies. And to be honest, it’s been so long since I’ve had one, I can’t compare. But these look more like the ones floating around the Internet rather than the Corn Cookie pictured on Milk Bar’s site. And, you need freeze dried corn kernels ground into a powder, so you might just be better off buying this mix.

All I can tell you is, even my husband who isn’t so keen on box mixes, liked them. I’d definitely buy the mix again, but I only made 6 cookies and I put the rest of the dough in the freezer. So I’m set for a bit.
