We Tried Trader Joe’s Cinnamon Roll Blondie Bar Mix

You know when you’ve got that cinnamon roll craving, but waiting for the dough to rise isn’t an option? Trader Joe’s Cinnamon Roll Blondie Bar baking mix might be just what you need. I opted to follow the box directions on the first go, as I usually do. But do I wish I had added some chopped nuts? Yes.

Be prepared, you’re gonna need a stick + 3 T. butter for this one. While the box advises greasing the pan with nonstick spray, I just used what was left on the the butter wrapper. Non-stick spray never seems to be enough for baked goods.


You mash together the 3 T. butter with the cinnamon filling packet and set it aside. Then you whisk together 2 eggs, the baking mix packet and melted butter. Spread it in to your pan (I used an 8×8 instead of the 9″ the box directs), so these are slightly thicker bars.

Top the batter with dollops of the cinnamon filling. You don’t need to make balls like this, it’s just how I divided it into 12 parts. You’re gonna swirl it in anyway, so arguably, don’t make it into balls.

So here’s the cinnamon mixture swirled in best I could do it. Then you’re gonna bake it for 25-30 mins and let it cool completely. My oven is getting old, so it took another 5 mins to get the top set.

Once it’s cooled, you mix the glaze packet with 1 T. (or slightly more water) and then drizzle it on. This is about half the glaze, so no worries if you’re wanting more. I tend to err on the side of less glaze since I like things less sweet.

I was nervous about leaving it in the pan until it full cooled, since it might sweat. But it seemed to be ok. The blondie bar came out on the softer side, somewhere between cake and blondies/brownies. But it definitely scratches that cinnamon roll itch. If you liked the Stroopwafel Loaf Mix from last year, I’m betting you’ll like this, too.

You could skip the glaze and top it with some vanilla ice cream, which I think would be killer.

Would I buy Trader Joe’s Cinnamon Roll Blondie Bar mix again? Sure.
