You've seen the Snackadium, the pizza with a pepperoni football, the zillion layer dip, but come Sunday you might want a more literal football food -- inari, the sushi we've always called "footballs." The basic inarizushi is simply filled with seasoned white sticky rice, a fancier version might add some shredded teriyaki chicken and carrots, and this one, I went full-on, stuffing it with bacon and char siu fried rice.
The gas burners are just flaming on under tumbling piles of green chiles and already I’m in overdrive. Every year as chile season rolls around, it’s a new challenge. What can I put green chile in this year? My first answer this year: Zucchini Green Chile Fritters.
If you’ve got a garden, or a neighbor with…
Wolf was down in California finishing off Triathalon season over the weekend and I was back at the ranch prepping for the long week ahead. Food-wise, it was a hodge-podge, though I did cook Friday night after living off of enchilada casserole all week. It felt good to get back in the kitchen on Saturday morning and do something that didn't involve sitting in front of a computer. Kneading dough for pita bread and running some errands did me some good. But then that pita really needed something to go along with. Hummus? Mmm, ok, but maybe something else?
Super Bowl Sunday always seems to be about dips. Salsa, guacamole, Lipton onion soup mix, ranch, maybe hummus. If you're looking for a little something different for your Super Bowl shindig the sumac-spiced sauce that goes with these turkey zucchini burgers may be just the thing. The burgers, from the Jerusalem cookbook, are very good, and…
Thanksgiving is just two (and a half) weeks away. I’m sure you’re already working on your plan – turkey, stuffing, sweet potatoes, mashed potatoes, salad, green beans, pie. But have you figured out snacks? While everyone mills around or watches football before the big meal, don’t you need a little something to nosh on? Well, of course there'll be Chex Mix. What about something a little more special, but still quick to make? These Sun-Dried Tomato Pesto Pinwheels fit the bill. Pizza dough cinnamon roll people, this one’s for you.
You know that thing I said about tiptoeing into fall? It’s on hold. Well, temporarily. Ma Nature has gifted us with an extended summer and around these parts, you don’t look a sunny and 75 gift horse in the mouth. You bypass the pumpkin lattes and keep on making cold brew and enjoy every last bit of summer you can, because there’ll be beets and parsnips from the moment it ends until July comes around again next year.
I’m sure I’ve committed some kind of culinary crime with these vegetarian summer rolls. Violated a sacrosanct law by bringing quinoa into the picture. A grain that’s as hipster as skinny jeans and typewriters. But if you’re trying to get more whole grains, more fiber, well, then you work it in where you can. These summer rolls are a perfect little snack, a perfect little starter and they’re chock full of vegetables.
Happy New Year, folks! I'm not much for new year's resolutions, but coming off two weeks of insane indulgence, it's time to get back on the wagon. I won't be vowing to hit the gym only to poop out by the end of January, but I will be trying to eat more vegetables and get more whole grains into my diet.
So let's start off the year with this gorgeous muhammara dip, shall we? Using a base of roasted red peppers, it makes for a pretty healthy snack with pita chips or carrot sticks and offers a nice alternative to hummus. It's fantastic alongside tzatziki for grilled chicken or lamb kebabs, too.
It's hard to resist things that are mini -- Mini M&Ms, mini cupcakes, mini doughnuts, Mini Coopers. You can add these mini parmesan popovers to that list. Perfect for holiday get togethers, they're fast and easy to make -- you just whirl up the ingredients in a blender and bake in a well-greased mini muffin…
