ROYAL WEDDING RICE CRISPY TREATS

Lemon Elderflower, Of Course

The clock is ticking! If you’re planning to make lemon elderflower everything for the royal wedding, it’s time to hustle on down to your local World Market or Total Wine stores. I did a little research and Belvoir’s Elderflower Cordial is the best of the bunch that’s readily available. It’s the critical ingredient in the lemon elderflower cake I posted earlier. But if you want something even easier, how about lemon elderflower rice crispy treats?


These only require a teaspoon of the Elderflower cordial (it’s strong stuff), so obviously lemon elderflower mimosas or mocktails with sparkling water are also in order.

I’m typically a traditionalist when it comes to rice crispy treats, but if you’ve been following @shitfoodblogger on Twitter, you know there’s some innovation happening in cereal-marshmallow treats. The first innovation of course, being personal-pan sized treats. We’re making just six muffin size treats, but you can halve it and make it just about personal-sized. Don’t be tempted to add the elderflower cordial to the white chocolate drizzle, it’ll seize. Trust me.

Lemon Elderflower Rice Crispy Treats

Serves: 6

Ingredients

  • 2 T. unsalted butter
  • 2 c. rice crispies
  • 1 1/3 c. mini marshmallows
  • 2 1/2 t. lemon zest, divided
  • 1 t. elderflower cordial
  • 2.2 oz. white chocolate (half of a 4.4 oz bar)

Instructions

Line a standard muffin tin with paper or silicon liners and set aside.

In a nonstick skillet, melt the butter over low heat. Add the marshmallows and let them melt completely, stirring occasionally.

Mix in the elderflower cordial and 2 t. lemon zest.

Turn off the heat and stir in the rice crispies.

Pack each muffin cup with about 1/4 c. of the cereal mix and press down to completely fill each cup. Damp hands will help ensure the cereal doesn't stick to your fingers. Let sit for 15 minutes to set.

Meanwhile, microwave the white chocolate in a small bowl in 30 second increments. Stir between each increment until the chocolate is just melted. Drizzle over the rice crispy treats and garnish with a sprinkle of lemon zest.
