Trader Joe’s salad kits aren’t usually on my shopping list, but something about Avocado Ranch said throw one of these in your basket. See how it is. And let’s be honest, I really never pass up a Frito salad. (There’s a good one in The Homesick Texan’s Family Table by Lisa Fain).
So, for $3.99, what’s in the bag? Ya got your salad mix with mostly red and green cabbage, kale, lettuce, carrots, and green onions (not that I noticed, but ok). Then, the avo ranch salad dressing packet, a little bit of cheddar cheese, and the corn chips.
The bag says this is 3.5 servings, but for me, it’s two. Or even just 1 if you’re really hungry. I opted to mix in some drained and rinsed black beans. If I had it, poached chicken would be good, too.
I liked the dressing more than I expected to. I don’t know if I could have told you it was avocado, but it definitely tempered the ranch a little bit. I’ll add a squeeze of lime and some cherry tomatoes next time. You could also take this one in a BBQ Chicken salad direction, too.
Overall, I think it’s a really good base that makes a fast and easy lunch or dinner. And because it’s mostly cabbage, it’ll probably last a little longer in the fridge if you need it to. For me, it needed more chips, so maybe grab a bag of Corn Chip Dippers, while you’re at TJ’s. Would I buy Trader Joe’s Avocado Ranch Salad Kit again? Yeah, I think I would.
