You know when a new pancake and waffle mix comes on the scene, I’m gonna make it as waffles. When Trader Joe’s Strawberries & Creme Pancake & Waffle Mix landed, I wasn’t super excited about the white chocolate chips. But that’s just me forever not wanting things to be overly sweet.
As I usually do when I make waffles, I decided to separate the eggs and whip the whites to soft peaks. But I otherwise followed directions and used 2 T. of oil in the mix. In retrospect, 2 T. of melted butter might have been better. Also, DO let the batter sit for 3-4 minutes, it helps hydrate the strawberry bits.
For me, these are sweet enough that they didn’t really need syrup or whipped cream, but to each their own. And actually, I thought the flavor was better second day when I toasted up a couple of the leftover waffles!
In the end, though, I think I’m just more of a waffle purist and would rather have the fruit on top rather than mixed into the batter. So Trader Joe’s Strawberries & Creme Pancake and Waffle Mix is perfectly fine, I just didn’t love it enough to make it a buy again for me personally.
