Coconut fans, Trader Joe’s is hooking us up with a super tasty air fryer-friendly dessert. Trader Joe’s Thai Coconut Pancakes, or Kanom Krok, is a Thai street food that’s usually cooked in a domed pan, similar to a takoyaki or aebelskiver pan. Made with coconut milk and rice flour, the centers cook up to a custardy consistency with a slightly crispy outside.
I airfried the first three sort of following the box instructions (it called for 320F, I went 325F). But I found I wanted them a little crisper on the outside. So I turned the airfryer up to 350F and cooked them for 8 minutes, turning half way through. The box advises letting them sit a minute or two when done.
They still didn’t come quite as brown as the box, but at 350F I liked the slightly crisper outside. I don’t think they’ll ever brown up like the ones cooked on the street, because they don’t have full contact with the pan.
Here’s the custardy cross section. The flavor reminds me of the Crispy Coconut Rolls Trader Joe’s used to carry, but with a pudding-like center. I liked these a lot. And at $3.29 a box, it’s a solid value. I still miss those coconut rolls (and yep, I bought the ones Costco had for awhile, too).
You’re supposed to pop them out of the little squares, but I like the crunchy edges, so I just left them. Trader Joe’s Thai Coconut Pancakes are marked vegan, so I’m going to assume Trader Joe’s checked on how the cane sugar in the ingredient list is processed. That can be a deal breaker for some vegan diets.
Would I buy these again? Definitely. With only 9 pancakes to a box, you may wanna grab two depending how many people you’re feeding. I feel like two of us could have polished these off easily.
