We Tried Trader Joe’s Mochi Cake Mix

A few weeks ago, Trader Joe’s promised it’d be rolling out a gluten-free Mochi Cake Mix as part of its new Spring and Summer products. It’s in stores now for $3.99 and we tried it.

What Trader Joe’s didn’t say in the initial announcement was that it would be “Hawaiian inspired,” flavored with coconut milk powder. A bonus in my book. Growing up, we called this coconut mochi or just butter mochi.


Made with sweet rice flour, you add water, melted butter and two eggs to the mix and bake it for 45-55 minutes. If you love the slightly dense, chewy texture of the mochi balls you’ve had in boba tea, you’ll like this one. If you don’t, then skip it.

As you can see from the photo, ours came out nice and golden after baking for 50 minutes. The middle slices have a more chewy texture than the edges, but overall, I like this one a lot. You can easily make mochi cake if you pick up sweet rice flour, called mochiko, in the international aisle of your grocery store or at an Asian market.     Not sure what happened to mine – maybe it’s a problem with my oven 🤷🏻‍♀️ It didn’t come out AT ALL!! I did everything exactly as instructed- and it came out swimming in grease and way too dense for the traditional mochi cake I know. Anyone else have this problem? I want to try the chocolate one- but wonder if I should make any adjustments.

    I think I found their inspiration for the mochi cake mix. Go to http://www.hawaiisbesthawaiianhaupia.com and check out their butter mochi mix. Their butter mochi mix has been around for 5 or 6 years. Looks almost exact ingredients, directions, 15 oz mix, 1 cup water, 2 eggs, 4 tablespoons salted butter, 8×8 pan, 350 degrees. Wow!

    I hate boba and don’t like chewy textures but I went nuts for this, it’s so rich and dense and sweet. Got another 3 packs in case they are temporarily. This may chance my mind about both taboos in my palette! It’s like a creme brûlée angel food cake marriage.

    If you make it in the Baker’s Edge Nonstick Edge Brownie pan it’s even better!!! I hope that people love the mix so TJ’s will contniue to carry it!
