Mac ‘n cheese has long been one of those staples that everyone is always trying to improve despite how fabulous it already is in its most basic incarnation. Does it really need lobster? Or 4 or 5 different cheeses? Or truffle oil? There are lots of creative variations, but I think Tyler Florence has hit the jackpot with his Mac ‘n Cheese with Bacon and Peas.
The recipe was included in his 2006 book “Tyler’s Ultimate,” but it’s come back up again on TF’s site since he’s doing a Friday morning #Twitlish cooking class via Twibes and Twitter. Interesting concept that puts him in touch with his fans live, but it puts about a gazillion tweets in your window. Anyway, back to the mac ‘n cheese. I can’t vouch for the exact recipe since I just used the idea and made the Mac ‘n Cheese I always make, mixing in the rendered bacon and thawed peas. So you could go about it two ways and use the bacon and peas as a topping as TF’s recipe suggests, or do what I did and just mix them in.
I think I was a little excited when this came out of the oven as all the photos are slightly out of focus…
