Even when I cook just for myself, I make too much. I went to the Farmers Market Saturday knowing fruit and veg intake would be down this week and still came home with a full bag of produce. Take this one for instance — Giada de Laurentiis’ recipe for Whole Wheat Linguini with Green Beans, Ricotta and Lemon. I’m really trying to make just two meals worth (I hesitate to say servings) — one for tonight and maybe leftovers for lunch.
Of course, I discovered the lovely hand-dipped ricotta I bought at Whole Foods had gone off before I had a chance to make this. Did I mention Giada’s recipe was part of a show on “Bikini Dinners?” Um, ok. Anyway, ricotta-less, I subbed in cubes of fresh mozzarella (bought at my new favorite store – Grocery Outlet – it’s a long story and a whole other post). I roasted the cherry tomatoes yesterday and topped the thing with a chiffonade of basil and a good sprinkle of romano cheese. Molto bene! (Or something).
