Recipe: Spring Spinach Arugula Pesto


I’ll just say it – I’m so over the cafeteria at work. Everyday I walk from station to station – Chinese? Eh, no Panda Express knock off today. Specialty salad? Nah. International station (could be Indian, could be burrito day, or just a couple of slices of pork loin with potatoes and veggies). Nah. Sandwich? If I wanted a sandwich, I coulda brought it from home.

So I’m going to try and turn over a new leaf. Lunch from home is a thousand times better anyway — cheaper and tastier. So tomorrow we’re having spinach arugula pesto.
